On a hot summer day, nothing hits the spot like a nice cold refreshing fruit smoothie. One of my favorites is the 5-Minute Vegan Breakfast Smoothie from the Kitchn.
I like to kick it up a notch by adding a serving of Akasha Greens, an amazing source of vitamins, minerals, digestive enzymes, essential fatty acids, probiotics, and hundreds of phytonutrients.
5-Minute Vegan Breakfast Smoothie
1 cup almond milk
1 ripe banana, sliced
1 cup frozen fruit medley (favorite: strawberry, mango, pineapple, papaya)
1 tablespoon coconut oil
1-2 tablespoons chia seeds
1/2 teaspoon of fresh grated ginger or 1 teaspoon powdered ginger
Combine the almond milk, banana, frozen fruit, coconut oil, chia seeds, and ginger in a blender and purée until smooth. Pour into a glass and serve immediately.
